Pizza Dough - The one that started it all.

While flipping through my new cook book, the first recipe that grabbed my attention was the pizza dough.  I have never made pizza dough from scratch but I love pizza so I just had to go for it.

The book has not one but two recipes for pizza dough, a white and a whole wheat recipe.  Since I didn't have any whole wheat flower, my choice was pretty obvious.

The dough came together fairly easy, though I did have to add a little extra flour to get it to come together.  It rose quickly and more than doubled in the hour that was given for the first rise.

The recipe made enough for four individual portions, or two large pizzas.  This time, I split it into four individual portions and made both pizzas and calzones.  The dough spread evenly and easily without any tearing.

All I can say is that this was the best pizza I have ever had.  It was light and got nice and crisp, even on a baking sheet.  It was delicious with just enough flavour to make the dough enjoyable without masking the flavours of the sauce and toppings like some other doughs can.
